What are The Different Positions of a Chef?

Every kitchen today contains a structure that defines the roles of the employee and everyone is expected to abide by them. The kitchen is divided into a positional hierarchy often known as Brigade de Cuisine-its a french brigade system to maintain the kitchen and allow smooth functioning.

 

We need to be aware of this hierarchy and understand our position in it and get the required position when you see the tag I need a chef.

 

The Kitchen Hierarchy

 

●Executive chefs

They focus on managing the kitchen and their work is related to the proper functioning of the kitchen. They are the managerial staff and they are not responsible for cooking.

 

●Chef de Cuisine

They are the head chef. Their work is related to managing staff and involves looking after the whole kitchen. Can also be involved in creating new menus, pricing, and sale.

 

●Sous Chef

Their work is similar to the head chef but they do engage more in day-to-day activities of the kitchen.

 

●Chef de Partie

It's the most important role and is also called Station chef. This role is further divided among many people and there is more than one chef de partie. This ensures higher productivity and an efficient work balance during busy hours.

Specific roles of Chef de Partie include

 

● Sautè chef

Responsible for sautèing foods and preparing sauces and gravies to serve with the food.

 

● Boucher

They are responsible for preparing meat and poultry before they are cooked.

 

● Poissonnier

They are the fish chefs and prepare fish and seafood.

 

● Commis chef

Works under chef de partie to understand the kitchen as a whole. Can be in the training stage.

 

● Kitchen porter

Responsible for the basic tasks like cutting vegetables, peeling potatoes, and other basic pre-cooking tasks like cleaning.

 

● Escuelerie

 The dishwasher.

 

● About

They interact with the customer, serve them, and take orders.
